Chick Pea Salad In Gujarati With Raihana's Cusisines

This is a deliciously refresshing salad that is not only guilt free but is packed with different types of vitamins and fiber.
3 cups chic peas boiled
2 cups sweet corn
1 cup light red kidney beans
1/4 cup sweet onion
2 lemons juiced
1 cup carrots
1 cup celery
2 English cucumbers chopped in tiny pieces
1 orange bell pepper
1red bell pepper
1 yellow bell pepper
5 tbsp olive oil
2 tbsp rice vinegar
1 tsp fresh pureed garlic
1/2 tsp lemon grass puree
1/4 tsp cumin powder
1/2 tsp himalayen salt, you can use regular if you like
1/4 tsp red pepper flakes
1/4 tsp black pepper
fresh chopped mint (use how much you like)
1/2 cup to 1 cup chopped cilantro
Start combining all the ingredients in a large bowl and add the herbs and olive oil, make sure you do a taste test and adjust your seasonings per your taste.
Refrigerate for at least an hour.
